Sun-ripened apples grown in South Canterbury New Zealand are cold pressed and fermented without the usual subsequent processing that can remove valuable nutrients. Because of this the product will darken or cloud over time and the natural mother of vinegar may reform but the product remains perfectly usable and the sediment you see is intentional.
